Broccomole

Try this Broccomole recipe from our Body Well program for this Cinco de Mayo. 🪅🌮

INGREDIENTS

  • 3 cups chopped broccoli
  • 1 jalapeño, chopped, seeds removed
  • 2 TBSP green onions
  • 1 tsp oil of choice
  • 1/2 avocado, skinned and sliced
  • 1/4 tsp chili powder
  • 1 TBSP cilantro
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cloves of fresh garlic
  • juice of 1/2 lime
  • fresh raw veggies such as carrots, celery, and/or cucumbers

DIRECTIONS

  1. In a large pot, boil the broccoli until very soft - almost to the point of overcooking.
  2. Drain broccoli & transfer it to a food processor.
  3. Add the remaining ingredients and process until smooth.
  4. Serve with fresh veggies.
