Try this Broccomole recipe from our Body Well program for this Cinco de Mayo. 🪅🌮
INGREDIENTS
- 3 cups chopped broccoli
- 1 jalapeño, chopped, seeds removed
- 2 TBSP green onions
- 1 tsp oil of choice
- 1/2 avocado, skinned and sliced
- 1/4 tsp chili powder
- 1 TBSP cilantro
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cloves of fresh garlic
- juice of 1/2 lime
- fresh raw veggies such as carrots, celery, and/or cucumbers
DIRECTIONS
- In a large pot, boil the broccoli until very soft - almost to the point of overcooking.
- Drain broccoli & transfer it to a food processor.
- Add the remaining ingredients and process until smooth.
- Serve with fresh veggies.
